One of our favourites is the Aburi Mentai Bara Chirashi Don (S$14.90+). Packed full of delicious seafood goodness, the bowl features an array of diced Hokkaido scallops, smooth Norwegian salmon, tuna, homemade Tamago egg, sweet and succulent prawns, two kinds of fish roe – salmon and flying fish, whelk clams, all atop a fluffy bed of sushi rice from Niigata.

For those who have a thing for mushrooms and stronger flavours, you can opt for Truffle Salmon Don (S$10.90+). This is definitely not for you if you prefer tasting the original and sweet flavours of the seafood as it can be slightly overpowering. Hokkaido-Ya uses premium quality ingredients, with their salmon chilled and air-flown from Norway.

Be sure to get a good bite of everything with the crispy tempura crumbs and cucumber for an additional crunch!

Fun Fact: The Artificial Intelligence (AI)-enabled self-ordering kiosk has a facial recognition programme for customers to access past orders. It also offers targeted promotions based on individual food preferences! How cool is that?

17. HaiDiLao

The most popular craze since it hit Singapore a few years ago, HaiDiLao has been known for its wide selection of hotpot soup-based and side dishes! More importantly, it has been celebrated for its outstanding customer service, with secret codes and tips surfacing online to get free gifts. Amazing isn’t it?

We would describe HaiDiLao as more of an experiential dining experience serving traditional Sichuan-style hot pot in a modern and trendy dining setting.

Feeling overwhelmed by the many great selections? Fret not, we got your back!

For hotpot soup based, we recommend the OG Authentic Sichuan Mala Hotpot Soup Base. Made from Sichuan red peppercorns, the soup has a strong peppery aroma and is definitely not for beginners. Proceed with caution!

The soup base has been slow-cooked and we recommend including thinly sliced pork, beef and slightly chewier meats such as lamb as it soaks up the soup really well!

For all the non-spicy lovers, HaiDiLao also offers their signature All-New Tomato Hotpot Soup Base. Rich and dense tasting, it has juicy, tangy yet sweet tomatoes. The tomatoes are also generously added to the bottom of the pot!

Now comes the fun part, the Hai Di Lao-styled noodles! Hand-pulled and freshly served in front of you, marvel at the theatrics and skills that go into making the noodles chewy as they are swung and spun in a controlled yet fast manner.

Shabu Shabu, also loosely referred to as thinly sliced meat in Singapore is a must-have essential in hotpots. We strongly recommend trying their Exquisite Fatty Beef Slice and Hai Di Lao-Styled Fatty Beef Slice. The difference between them is that the former is made of chuck steaks from to 1-6 ribs on selected cattle, imported and naturally grain fed for over 100 days. The cut of meat is definitely special, with each cattle only carrying only carries 20 kg of it!

18. Barossa Steak and Grill

Dear steak lovers out there, this is the place for you! What are you waiting for?

An Australian-inspired steakhouse and bar, Barossa Steak & Grill offers a diverse selection of charcoal-grilled meats, hearty Australian fares, and Josper-grilled options.

Specialising in dry-aged Australian beef, Barossa has its own dry-ageing fridge – the Dry Ager. Larger cut meats such as Porterhouse and Tomahawk are aged for 50 days while smaller cuts such as Tenderloin, Striploin and others are aged for 25 days.

Now, for our recommendations. Definitely go for their house speciality, a 600g serving of Australia Premium 50-day Dry Aged Porterhouse (S$138++). A prized cut of meat combining the best of both worlds, it offers a more unique taste and mouthfeel – perfect harmony between a leaner melt-in-your-mouth tenderloin and the juicy, and beautifully marbled New York strip.

If you’re a classic fan of Wagyu, don’t skip theirs! The 300g Australia Full Blood Wagyu MS & Ribeye MS7/8 (S$108++). Buttery and caramelised on the outside, dip the meat into your choices of in-house sauces, such as the Whisky Double Mustard, Tarragon Bearnaise and Chimichurri Sauce.

Complement these meaty fares with Lobster Pasta (S$28++) on the side, made with tagliatelle tossed in Nantua, French creamy seafood sauce, lobster meat and sun-dried tomatoes.
