Catering to the mavericks, the non-conformists, the gentlemen and ladies, Gibson, one of the best bars in Singapore, presents to you an “uncompromising quality on cocktails, hospitality and interior design”.


This bar was named after the Gibson cocktail, a dry martini with an onion instead of an olive or lemon peel, aiming to be equally unique while being serious about their craft to provide only the best for you.


Located on the second floor of an 80-year-old heritage shophouse at Bukit Pasoh, step into a cozy bar with friendly bartenders that wear Bermudas with sport coats! With its vintage old school feel, get whisked away from this fast-paced society, kick back and enjoy a sip of quality cocktails while listening to their blues and swings playlist.

Gibson is also part of the Jigger & Pony Group, a hospitality company was founded in 2012 and runs award-winning bars and restaurants. Apart from Gibson which specialises in Asian-inspired cocktails, the group has 3 other unique cocktail bars and 3 restaurants in Singapore.

The Gibson

The signature cocktail that was used to name the bar, The Gibson is similar to a classic martini but made with a blend of Roku gin and in-house Ginjo sake-vermouth served with 3 condiments: pickled daikon (radish), pickled onion and smoker quail egg.


Embodying simplicity and perfection, The Gibson has distinct layers of flavours, a dryer & slightly fruity flavour and a clean taste. To fully enjoy The Gibson experience, you would need eat the condiments in this sequence: daikon, onion, quail egg, and take a sip after consuming each condiment.

Urban Farmer No. 4

Part of the Urban Farmer cocktail series that’s made with the local agriculture collective Edible Garden City, this series has stayed on the menu despite multiple menu iterations. The Urban Farmer No.4 features the locally grown Cranberry Hibiscus, contributing to the orange-red hue of the drink.


This gin-based tipple is made with Stranger & Sons gin and an assortment of handpicked fruits, including raspberry. This refreshing citrusy drink with a subtle sweetness is perfect to start your evening with!

Sugarcane Spritz

Fresh sugarcane juice is one of Singapore’s famous drinks, a refreshing drinks that quenches our thirst in this warm weather. Featuring sugarcane wine, this drink was exclusively made for Gibson, by Singapore’s “Price of Fermentation”, a food scientist named Tan Ding Jie.


Basing it on this familiar Southeast Asian drink, Gibson puts it on twist on it by mixing the sugarcane wine with Yaguara Cachaça (Brazil’s national spirit made from sugarcane juice), Pineau des Charentes (fortified wine from western France), Muyu Chinotto (modern liquer), verjus (acidic juice), lime cordial (lime-flavoured drink mixer) and olive brine.


The Sugarcane Spritz will give you a refreshing experience with its tangy taste and acidic depth!

Back to the Roots

Incorporating an Asian twist on the classic Manhattan cocktail, Back to the Roots is a Chinese licorice mixed with Jack Daniel's Tennessee Rye (whiskey), Tempus Fugit Creme de Cacao (liquer), Del Professore vermouth blend and Non 6.


This bold spirit-forward tipple will give you a strong in-depth taste, with the tomato umami spiced up by a hint of basil and pepper spice!

Barley Sour

A new spin-off to the Whiskey Sour, Barley Sour is a cocktail that’s made with a Woodford Reserve Bourbon base, mixed with Mackmyra Vit Hund (Swedish whisky), toasted grain syrup, adlay sour mash that’s made in-house, Sachi soy wine and egg white.


The combination of these ingredients results in a fresh yet rich taste that most are sure to enjoy!


Price: $25 per cocktail

Aside from these 5 recommended cocktails, Gibson’s drink menu also features other Southeast Asian-inspired cocktails, reserve cocktails, punch bowls that are large enough for 8 – 12 servings per bowl and a variety of spirits (mixers sold separately)! To pair with your cocktail, pick up some oysters picked from Humpback (also owned by the Jigger & Pony Group)! With its home being the North Pacific Ocean, these oysters are flown directly to Singapore and carefully curated upon arrival before being served as a creamy fresh bite! To preserve the freshness, these oysters are brought from farm to your table in 36 hours.


Their oyster menu tends to rotate so do check out their website or ask the staff about their selection of oysters for the day!

Octopus

Craving some seafood? Try out this peculiar taco that’s being offered!


Here’s Octopus, a potato taco served with burnt eggplant, spiced honey glaze and of course, octopus! This snack will be able to give you a savoury break from your drink, be it a cocktail, mocktail or others.

Aside from snacks, there are also more filling meal options that goes well along with your choice of cocktail/mocktail! A classic pasta dish is definitely one of the best food choice to perfectly complement your alcoholic drinks!


Made with saffron, anchovy gremolata and breadcrumbs, this Mussel Spaghetti has a stronger flavour then you would expect, along with its buttery taste that may be “jelat” to some. However, it is still an enjoyable dish that you should try!

  1. Take Exit A at Outram Park MRT Station (EW16)

  2. Walk along Outram Rd before turning right onto Eu Tong Sen St to cross the zebra crossing.

  3. Cross the traffic light towards Dorsett Singapore and turn left.

  4. Walk along the path before turning right at Dorsett Singapore’s taxi stand.

  5. Walk along the pathway on the right and cross the road once you see the store “simplicity”.
